Evgeny Chichvarkin's Hide, a renowned Michelin-starred restaurant in London's Mayfair, sits at 85 Piccadilly, an address that demands a certain level of execution just by virtue of its postcode. I was in London on a business trip, navigating the usual schedule of meetings, but the afternoon had a different agenda — managing a cross-city outing with my fiancée's mother before catching a matinee of The Book of Mormon at the Prince of Wales Theatre located in the heart of the West End theatre district since 1884.

Taking your future mother-in-law to see a spectacularly profane musical is a calculated risk, which makes the choice of a highly structured, reliable pre-theatre meal a necessity. Hide was the chosen venue for that grounding. When the charred octopus arrived at the table, the sommelier's recommendation — Fulcro Finca A Pedreira 2021 — made immediate sense. Octopus demands salinity, and it needs acidity to cut through the char and the dense, meaty protein of the tentacle. I rarely object when a sommelier suggests a pairing that aligns with basic culinary logic, especially if it's Albariño and grilled octopus.

The region in question is Galicia — specifically the DO Rías Baixas on Spain's northwestern, maritime edge. Within that appellation, the wine originates from the Val do Salnés, the oldest and coolest subzone defined by steady Atlantic humidity and an overt oceanic influence. The soils in the Meaño-Sanxenxo corridor where the vines grow are predominantly granitic sand, heavily embedded with quartz and mica. It is a hostile environment for vines seeking comfort, but a highly effective one for producing white wines built on tension rather than weight. The maritime climate forces the grapes to retain high acidity and a distinct saline character, bypassing the softer, tropical profiles found in warmer inland sectors.

Bodegas Fulcro is the project of Manuel "Chicho" Moldes Morana — a winemaker who operates outside the commercial mainstream of the region, having founded his "garage winery" in the Salnés Valley in 2009. Morana is widely known for his site-specific, terroir-driven expressions of Albariño rather than generic commercial blends, as well as his efforts to revive rare indigenous Galician red grapes like Espadeiro and Loureira Tinta. The 2021 Fulcro Finca A Pedreira is built entirely from 100% Albariño, sourced primarily from the A Pedreira vineyard and its immediate surrounding parcels. His cellar approach is strictly intervention-averse, relying on native-yeast fermentations and deliberately blocking malolactic conversion to preserve the grape's coastal snap. To prevent the high acidity from becoming austere, the wine undergoes his signature unconventional aging regime — extended lees contact and partial aging in used French oak foudres alongside stainless steel. This dual élevage builds breadth and texture without masking the stark minerality of the site. It is winemaking as an act of preservation.

The 2021 vintage in Rías Baixas marked a return to a cooler, classically Atlantic profile — a slower ripening season that preserved the grape's piercing acidity and provided exactly the structural backbone required for Morana's extended aging regime. That cool-climate tension, alongside the inherent salinity of the granitic soil, allowed the 2021 Fulcro Finca A Pedreira to act as a counterweight to the char of the octopus, doing exactly what a serious coastal wine should do. Later, the musical was a deliberately outrageous piece of satire, as expected.
